Chicken Noodle Soup Recipe
You’re probably wondering what chicken soup has to do with travel. Nothing really! I just wanted to file this chicken noodle soup recipe somewhere and share it with friends and readers. It’s a really simple thing to make and there is no reason you need to buy something that is processed or has a ton of preservatives. I have actually made this while I was sick and travelling so this is something that is actually perfect for long term travel or when you’re on the road and need some comfort. It is also easy to make this for just a few dollars!

HELPFUL GENERAL TRAVEL TIPS

I don’t really measure things or follow recipes. I freestyle a lot. Here is a list of ingredients you will need for your chicken noodle soup:
- chicken breast (size depends on how many people you are making soup for)
- onion
- 2 carrots
- 2 celery stalks
- chicken broth or water + chicken bouillon
- Italian parsley
- dry pasta noodles – you can use macaroni, spaghetti, anything really
- half a lemon
Take a fresh or frozen chicken breast
Throw it into the pot and fill it with water to boil. Let the breast cook in the boiling water.
While the chicken is cooking, dice up celery, onion, and carrot!
Take out the cooked breast. Let it cool (put it in the freezer to speed up the process). Don’t discard the broth!
Throw the “mirepoix” into a pot and cook with butter or olive oil
And cooking!
While the mirepoix is cooking and breast has cooled, shred it.
Shredded!
Now add broth, chicken, and mirepoix together in pot
Add more flavour by adding bouillon cubes. I used Better Than Bouillion. It is!
Now chop up some fresh Italian parsley (or you could use another herb like dill)
Throw everything into the pot. I didn’t shoot the noodles but I used some spaghetti noodle which I cut up. Squeeze some lemon juice to add to the flavour. It’s so good! Trust me!
And the final product!! Comforting chicken soup!
